Position Overview

We are seeking a skilled and passionate Line Cook to join our culinary team. In this role, you will prepare high-quality dishes with consistency, precision, and attention to detail while contributing to an exceptional dining experience for every guest.

The ideal candidate thrives in a fast-paced kitchen, values teamwork, and takes pride in executing recipes to the highest standards. As part of the Populus culinary team, you'll help create memorable dining experiences while supporting our commitment to sustainability, responsible sourcing, and minimizing food waste.


What You'll Do
Food Preparation & Execution

  • Prepare menu items according to established recipes, plating standards, and quality expectations.
  • Execute food orders accurately and efficiently during service while maintaining consistency and presentation.
  • Complete daily prep work based on anticipated business levels without overproducing.
  • Ensure all food is prepared and served at proper temperatures and according to food safety standards.
  • Assist with banquet, brunch, buffet, or special event preparation as needed.


Kitchen Operations

  • Set up and stock your station before each shift to ensure service readiness.
  • Monitor inventory levels, communicate shortages, and assist with ordering and prep planning.
  • Properly label, date, rotate, and store food using FIFO (First In, First Out) practices.
  • Return unused products to appropriate storage following established food safety procedures.
  • Maintain clean, organized, and sanitary workstations throughout each shift.


Equipment & Food Safety

  • Safely operate and maintain kitchen equipment including ovens, grills, fryers, steamers, mixers, slicers, food processors, and other culinary equipment.
  • Follow all health department regulations, HACCP guidelines, and company food safety standards.
  • Report equipment issues or safety concerns promptly.


Teamwork

  • Work collaboratively with chefs, cooks, stewards, and front-of-house teams to ensure smooth kitchen operations.
  • Support fellow team members during busy service periods.
  • Maintain a positive attitude while adapting to changing priorities and business needs.
  • Perform additional duties as assigned.

  • Practicing thoughtful portioning and preparation to minimize food waste.
  • Following proper product rotation and storage to maximize freshness and reduce spoilage.
  • Supporting composting, recycling, and waste diversion initiatives.
  • Respecting responsibly sourced ingredients and preparing them with care to maximize quality and utilization.
  • Helping maintain an environmentally responsible kitchen while delivering exceptional culinary experiences.


Qualifications

  • Previous line cook experience in a high-volume restaurant, hotel, or upscale dining environment preferred.
  • Strong knife skills and understanding of cooking techniques.
  • Knowledge of food safety, sanitation, and proper food handling procedures.
  • Ability to work efficiently in a fast-paced environment while maintaining attention to detail.
  • Strong communication and teamwork skills.
  • Ability to follow recipes, production standards, and chef direction consistently.
  • Flexible schedule, including evenings, weekends, and holidays.


Physical Requirements

  • Stand and walk for extended periods throughout the shift.
  • Frequently lift, carry, push, or pull up to 50 pounds; occasional lifting up to 100 pounds with assistance.
  • Bend, stoop, reach, and perform repetitive motions throughout the workday.
  • Safely operate commercial kitchen equipment and work in hot, fast-paced conditions.
