Position Summary
The primary location of this position is on-site at the main Cullowhee, NC campus. This position is designated as being exempt from the State of North Carolina Human Resources Act ( EHRA).

This position serves as the WCU Campus Nutrition and Sustainability Manager and is supervised by the Director of Food and Beverage Services. This position collaborates with the Director of Food and Beverage Services to assist in the oversight of the University's third-party contracted food service and beverage providers along with the students' nutrition needs, quality assurance standards and sustainability initiatives.

Primary Responsibilities include:

  • Developing and executing initiatives to meet students' and customers' dietary needs and expectations
  • Supports health and wellness platforms and implementation of nutrition and sustainability programs such as tabling events, food samplings, cooking demos, lunch and learns, health fairs, guest speaker events and other on-campus programming
  • Collaborates with WCU Athletics Department to meet the fueling and nutrition education needs of student athletes
  • Works with the third-party contracted Marketing Manager to engage the student population through social media and pop-up events to drive engagement and student satisfaction
  • Works with the Aux Enterprises Marketing Manager to support meal plan sales by assisting students with choosing the meal plan that works best for their personal dietary needs and campus housing location and accommodations
  • Supports peer-to-peer programming and student interns as needed; may serve as a preceptor to mentor dietetic interns assigned as part of an accredited on-site dietetic internship program.
  • Ensuring the operational standards and performance of the relevant contractors
  • Stays current on dining, nutrition and sustainability practices and trends and applies learning as applicable
  • Ensures that third-party partners meet their food, safety and sanitation commitments
  • Considers and advises with the Meal Plan Policy accommodation process
  • Maintains relationships with students and student groups, including the Student Government Association (SGA), Student Association of Nutrition & Dietetics (SAND Club) to share information and to collect/assess student feedback
  • Collaborates with campus organizations on event and program planning; serve as a liaison between dining services and community partners; may serve on campus and/or community advisory boards develop and maintain Standard Operating Procedures and associated documentation as needed
  • Monitor relevant annual KPIs, and use them as a tool to make data-driven decisions


Performs other duties as assigned. The omission of specific duties does not preclude the supervisor from assigning duties that are logically related to the food, nutrition, and sustainability management of food and beverage service at the University.
Minimum Qualifications

  • Candidates must be legally eligible to work in the United States of America without the need for employer sponsorship or any other type of immigration-related assistance.
  • Bachelor's degree from an ACEND accredited 4-year university or college in nutrition and dietetics
  • Registered Dietitian Nutritionist credential with the Commission of Dietetic Registration and Licensed Dietitian/Nutritionist status
  • Food safety knowledge with ServSafe certification; must be obtained within 6 weeks of hire date
  • Food safety knowledge and food allergy knowledge with AllerTrain certification; must have achieved Certified AllerTrainer certification within 6 weeks of hire date

Preferred Qualifications

  • Master's degree in nutrition, dietetics, or a related field
  • 3+ years of Food and Nutrition Service management experience, preferably in a Higher Education environment
  • Knowledge in Sustainability programs, equivalating combination of education and/or experience
  • In-depth knowledge of Health Code standards
  • Possess passion for sustainability efforts
  • Experience with food service personnel, menu design, sustainability waste management, and food service best practices
  • Experience with contract negotiation and contract implementation
  • Experience managing retail brands and partnerships
